Preparation: 10 minutes

Cooking: 20 minutes

Total Time: 30 minutes

Servings: 4 plates

Ingredients

You’ll need the following pantry ingredients to prepare this delicious creamy and garlicky chicken dish:

  • 2 cups packed baby spinach
  • 1 cup heavy cream
  • ½ cup dry white wine
  • 1 head of garlic, peeled
  • 1 tablespoon olive oil
  • 1 and ½ tablespoons unsalted butter, divided
  • ¼ cup all-purpose flour
  • 2 large chicken breasts or 4 small ones cut in half, lengthwise

Instructions

First, take the chicken breasts and season with pepper and salt on both sides.

Take a medium-sized plate and pour flour into it. Dredge the chicken breasts with flour while patting off any excess. With medium-high temperature, heat a large, high sides skillet and then add 1 tablespoon olive oil and butter. Wait for the butter to melt, place the chicken breasts in the skillet, and sear both sides for about 8 minutes or until they turn deep golden brown in color. Remove the breasts from the skillet and place them on a plate.

Take the skillet and add the remaining half tablespoon of butter. With the temperature reduced to medium, take all the peeled cloves of garlic and add them to the pan. Toast all sides of the garlic until they turn light brown in color.

Pour the dry white wine in the pan, turn up the heat to bring to a boil, then reduce the temperature to a simmering one. Let the wine simmer until it reduces in quantity by half and then add the cream. Bring both the wine and cream up to a boil and then reduce to a simmer. Take the breasts and add them to this sauce. Let them cook until the internal temperature reaches 165°F. You can use a meat thermometer to measure the internal temperature.

Add the spinach when the chicken is cooked, cover the pan, and let them simmer for about 2 minutes. Uncover the pan and toss the ingredients until they are completely wilted. Serve the creamy garlic chicken with your favorite sides.
